Winter Warming Ideas for the Dinner Party Diva

Easy-peasy pumpkin, bacon and lentil soup
25g butter
1 onion
4 bacon rashers
500g butternut pumpkin
100g red lentils
4 cups chicken stock
Melt butter in a large saucepan on medium heat. Add chopped onions and chopped bacon (rind removed) and simmer for about 5 minutes.
Add the lentils, pumpkin and chicken stock. Cover and simmer for about 20 minutes until pumpkin is soft.
Pour contents into a blender and blend until smooth.
Serve with fresh sour dough or garlic bread.
